In the meantime, whisk together yolks, maple syrup, and pinch of salt in a metal bowl until combined well.<\/li>\n<li>Add the hot cream into the egg mixture in a slow stream, whisking until combined.<\/li>\n<li>Transfer the mixture back to the saucepan and cook over moderately low heat, stirring constantly, until it registers 160 degrees on a thermometer.<\/li>\n<li>Pour the custard through a strainer into a bowl.<\/li>\n<li>Stir in the vanilla.
